Tuscan Chicken Sausage and Red Bell Pepper Zoodles

  • 1 Tbsp Olive Oil
  • 1/4 Onion diced
  • 1 Chicken Sausage
  • 1 Red bell pepper diced
  • Dash
  • salt and pepper
  • 1 Large Zucchini Spiralized
  • 1 Tbsp Butter
  • 2 Tbsp Parmesan Cheese
  • 1 Tbsp Fresh Basil julienned
  • 1 Tbsp Goat Cheese crumbled


  • Zoodle zucchini, and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add onion and chicken sausage. Cook for about 5 minutes, then add red bell peppers, salt and pepper. Cook until chicken is no longer pink and vegetables just start to soften.
  • Add zucchini and butter and cook for just a couple minutes. Finish with parmesan cheese, basil and goat cheese.
