RECIPE: “Hidden Veggie” Chicken Parmigiana

Most red pasta sauces, or marinara, have lots of veggies, including onion, garlic and tomatoes. This recipe builds on that, and adds fresh green bell peppers and zucchini to the mix.

For Halloween, we made "rotten eggs" in cooking class - which was basically hard boiled eggs that had a black spider web design on the white, and a spicy (green!) guacamole later in the inside.

So, you want to add riced and spiralized veggies to your meals, but don’t have the time, energy or tools to make it happen? Check these pre cut veggies out from @sprouts ! Just sautée them with your favorite sauce (or butter, garlic and Parmesan cheese...mmmm) and call it a day! They cook up super quick, so you don’t need much time. . . In my cooking class, we often use spiralized or riced vegetables, and I always emphasize that it is important to NOT use them as replacements for your favorite foods. If you love rice, you eat that rice!Don’t expect cauliflower to satisfy you in the same way. However, if you want to eat more veggies, and like the texture and flavor of rice, you might find that you also enjoy your cauliflower prepared in a similar way with similar flavors. In cooking class yesterday, we made Rainbow Vegetarian Pad Thai from @pinchofyum - what a delicious way to start a year of healthy cooking classes! . . . I just love incorporating vegetables into my favorite dishes. Lots of added fiber, vitamins, minerals (and color!) If you make this at home, don’t skimp on the fresh herbs and peanuts, they really made the dish pop. Shhhhhhh. I’ll let you in on one of my kitchen secrets: D.O.R.O.T!! . . . These little frozen cubes of minced ginger, garlic and basil make adding flavor to simple dishes a breeze. My current trick is to add them with broth when cooking rice. It adds so much flavor and is easy as popping it out of the freezer. Not pictured are #dorot frozen cilantro and caramelized onions. . . Roasted broccoli is one of my favorite ways to enjoy vegetables. Just trim the broccoli to uniform pieces, toss with olive oil and sea salt, and roast @425 for about 20-25 minutes (until it starts to brown and get a little crispy). Roasted Vegetables are my FAVORITE side dish this time of year. (And they are super easy to make, too!) - Preheat oven to 425 - Put veggies (cut to be fairly uniform in size) on a sheet pan. Toss with olive oil, salt and pepper (or any other herbs and spices you like). - Roast in the preheated oven for 15-30 minutes, depending on how large the veggies are. . . .
