In my cooking class, we often use spiralized or riced vegetables, and I always emphasize that it is important to NOT use them as replacements for your favorite foods. If you love rice, you eat that rice!Don’t expect cauliflower to satisfy you in the same way. However, if you want to eat more veggies, and like the texture and flavor of rice, you might find that you also enjoy your cauliflower prepared in a similar way with similar flavors. It’s all about perspective and finding ways to enjoy your food!

I just love incorporating vegetables into my favorite dishes. Lots of added fiber, vitamins, minerals (and color!) If you make this at home, don’t skimp on the fresh herbs and peanuts, they really made the dish pop. We also used 1/3 of the fish sauce, which reduced the sodium (without reducing the flavor). .
